A dish is costed from the current price of every ingredient in its recipe, recomputed the moment you look at it. When a supplier price rises, every dish using that ingredient re-prices itself — and the ones that fall through a healthy margin are named, along with the ingredient driving the cost.

Selling at a loss is not a judgement call. It is subtraction, and the system does it on every read.
